Chaat Recipes

No trip to North India is complete without indulging in the various street foods on offer, especially chaat. Chaat can be found at almost every street corner, with each vendor selling their own speciality. From Aloo Chaat and Papdi Chaat to the more famous Dahi Bhalla Chaat, there’s something for everyone to enjoy. And it’s not just restricted to North India anymore – chaat has become famous all over the world. According to legend, chaat was born in the royal kitchen of emperor Shah Jahan. When the Mughal emperor fell ill, he was instructed by his Hakim to consume foods that are light on the stomach but high on spices so as to strengthen his immunity. That’s how chaat was discovered and has since become a beloved street food enjoyed by all.

Chicken Tikka Chaat

Chicken tikka chaat is a delicious Indian dish that contains a variety of flavors and ingredients, much like a quintessential chaat. The dish includes tomato, onion, green chili, and imli chutney, among other things.

Samosa Chaat

This dish is one of those that would have to really try hard to be bad because it’s made up of some amazing components. The base is made of chopped up samosas (delicious fried pastries that are usually filled with potatoes, peas, and spices), and then it’s topped with chutney, yogurt, and sev (thin fried potato bits). Usually, each component is already great by itself, but in this case, the final product is even better than all of the separate parts. To eat it, just grab a spoon and scarf it down!

Sev Puri

This dish is a variation of Samosa Chaat, where traditional samosas are replaced with fried puri crackers. It’s a lighter and less spicy version of the original, but just as addictive!

Bhel Puri

The puffed rice salad is a must-have dish when you visit this restaurant! It comes with all the fixings – onions, thin sev, and various chutneys that have been thoroughly mixed together. I always order this dish with everything, and eat it quickly – it gets soggy very fast.

Aloo Tikki

Aloo tikki is a delicious, pan-fried potato and onion cutlet that is similar in appearance to a fritter or latke. It is usually served with chutneys and yogurt on the side so you can dip your tikki into them liberally. Hot tip: McDonald’s India makes a fabulous McAloo Tikki Burger with an aloo tikki patty, sweet tomato aioli, onion, and tomato. This burger has now achieved cult status in the southern Asian subcontinent!

Dahi Vada

Fried flour balls that are drowning in yogurt and topped with heavy dustings of black pepper, chili powder, and chaat masala—the combo is a veritable bomb of pungent, sinus-cleaning seasonings. Drink the leftover sauce once you’re done with your vada, or at least dip something else into it. It’s not meant to be wasted, and it’ll cool you down. Plus, it’s a great way to add some extra flavor to your meal!

Gol Gappa – Pani poori

If you’re looking for a delicious and unique snack, look no further than gol gappa! These little spherical fried crisps are filled with potatoes, chickpeas, onions, and chutneys, and served with some kind of flavored water (usually tamarind or cilantro-mint). To eat a gol gappa, you spoon a little bit of the water into the center of the crisp and pop the entire thing in your mouth. Whatever you do, don’t take a bite out of it, or you’ll end up with a huge mess. “I tell people to eat it like sushi,” Chouhan says. So next time you’re feeling snacky, give gol gappa a try!
